Are you a tofu fan? This plant-based protein couldn’t be more delicious when it’s prepared correctly. Of course right out of the package, it’s flavorless and mushy. But cook it right, and you’ll be singing it’s praises!
Here are all the best recipes for turning this protein into healthy and easy meals. You’ll find our favorite tofu stir fry, an easy way to make it into a full meal with colorful veggies. Types of Tofu
Tofu comes in many different textures and is one of those delightful foods that has the versatility to be transformed into a hearty entree or a creamy custard. It works as egg, cheese, and meat replacers. Understanding the distinction is critical in perfecting your tofu recipes.
Regular vs. Silken Tofu
The first thing to note in the recipe does it call for regular or silken tofu.
Regular tofu is most of the water-packed tofu on the market. It is in the refrigerator section as is used in recipes such as stir-fries, scrambles, and cutlets.
Silken tofu, on the other hand, is a shelf stable product found usually in the international food aisle at most well-stocked grocery stores. Silken tofu has a creamier consistency than regular tofu making it a great egg replacement for custards, puddings, and cream pies. When a recipe calls for silken, it is very important that you use that variety. Regular tofu just won&rsquot work.
Pro Tip: Both silken and regular tofu come in soft, medium, firm, and extra firm textures. Make sure to stick to the recipe guidelines when choosing the correct tofu as these all have a huge impact on the overall texture of the recipe.
Best tofu recipes
Tofu always comes with a little of its liquid in the packaging, so its best to drain it thoroughly on kitchen paper before frying, to prevent it from spitting too much. You can then cut into whatever size pieces you like, or even keep whole. Heat 1cm of oil in a frying pan until hot, then fry the tofu on all sides until browned and crisp, around 30 seconds – 1 minute each side. Drain on kitchen paper, season and serve.
To make crispy tofu, cook for 2 to 3 minutes on each side until really caramelised.
Can you eat tofu raw?
Yes you can. Silken tofu is often served on top of dishes, as its name says it is prized for its soft texture and is sometimes served chilled. Normal tofu can be eaten raw, but is often fried to add extra texture and flavour to it.
How do you cook silken tofu?
This is often cubed and added to soups and stews, right at the very end. As it is quite fragile it is added at the end of cooking to warm through, with minimal stirring as you want to keep it whole in the final dish.

How to cook tofu
&bull Tofu comes in different densities, ranging from soft to extra-firm. Soft is better for purées or some soups and stews, while firm is better for frying and baking. It&rsquos important to seek out the type of tofu that the recipe calls for.
&bull &ldquoPressing&rdquo tofu helps extract excess moisture, which is essential for achieving crispiness. Wrap the tofu in a clean dish towel and place a heavy pan on top let it drain as long as you can before proceeding with the recipe.
&bull Just like any cut of meat, you can marinate tofu for a major flavor boost. Just don&rsquot leave it in the marinade for too long (an hour, tops!), or it will get soggy.

Good morning. I’ve been doing these occasional happy-hour conversations with food people from The Times, livestreaming them on the internet and taking questions from those who sign up to watch and listen. I’ve talked with Melissa Clark. I’ve talked with Kim Severson. Here’s another great recipe, which Mark Bittman pulled out of the chef Jean-Georges Vongerichten many years ago, for chicken with vinegar. All recipes are storytelling. JGV, as he is known to those who write about food for money, learned to make the dish from the great Paul Bocuse, who learned it himself when he was cooking for Eugénie Brazier as a youngster, at La Mère Brazier in Lyon, France. It has big vinegar energy. You may want to cut the sauce with a splash of water.

I’d like to make stir-fried sweet potatoes this week, and cod cakes, and slow-roasted Turkish lamb. I’d like to bake an almond cake, and cook this blanquette, with scallops in place of the usual veal. I scored a nice beef tenderloin the other day for the freezer. I’d like to thaw it carefully and use some of it for Gabrielle Hamilton’s ace steak tartare, and the rest the next day for filets mignon with morels.

How to press tofu quickly:
There are a few things you need to know about tofu. The most common way to buy it is packed in water. You usually need to press the tofu to drain most of the water, especially for stir fries or baked tofu. You can skip this step buy purchasing super firm tofu that is vacuum packed, not in water.
To press it very quickly, remove the tofu from the water pack and cut into cubes. Place the cubed tofu on a flat surface like a cutting board, lined with paper towels (or a clean tea towel.) Cover with more paper towels, a baking sheet, and then place something heavy on top like a cast iron skillet. This way, you only need to let it press for about 15 minutes while you make the marinade.
My set-up looked like this:
While it is pressing, combine the marinade ingredients in a small bowl. Once tofu is done pressing, place the cubes in a shallow baking dish and cover with the marinade. Let it marinate in the refrigerator for at least an hour, longer if desired.

The Best Crispy Tofu
The key to getting tofu nice and crispy is to first remove excess moisture. We wrap the block of tofu in a clean kitchen towel and place a heavy pan on top of it to press out as much water as possible. When searing the tofu, resist the urge to move it around. Instead, allow it to form a crust before flipping, and then again let it cook undisturbed on the other side until browned.

Real-Deal Mapo Dofu
Not ready to give up on your meat just yet? You can still wade into the soy waters with this classic mapo tofu (or "dofu," as it's sometimes styled), featuring both tofu and beef—a surprisingly simple dish that takes just 15 minutes to put together. We cook the meat in a chili-infused oil, along with other aromatics and flavor enhancers like garlic, ginger, chili broad bean paste, and Shaoxing wine. The result is a bowlful of simmered silken tofu and beef coated in the fiery-hot oil, and it's dangerously addictive. Serve with plenty of white rice for a cooling counterpoint.
Silken Tofu With Spicy Sausage
Steamed silken tofu topped with meat and gravy is a homey Chinese comfort-food staple. While traditional preparations use minced pork that's been marinated for hours, we keep the prep time to a minimum (and add some Western flair besides) by starting instead with spicy Italian sausage, cooked in a thick, glossy sauce of shiitake mushrooms, soy sauce, oyster sauce, and cornstarch.
Banh Mi Panzanella
This mashup salad creatively blends the Italian bread-based salad panzanella with the flavors of Vietnamese banh mi. Oven-dried baguette cubes and seared tofu form the base homemade pickles and fresh vegetables add crunch and acidic tang a sweet-and-savory honey-hoisin sauce dresses it and a final drizzle of chili mayo adds heat. Note that the marinade for the tofu here contains fish sauce, but you could easily veganize your tofu by using the marinade from our grilled tofu banh mi recipe, and swap out the mayo for a vegan alternative like Just Mayo.
Khao Tom Thai Rice Soup
Flavored with lemongrass, shallots, and garlic, the broth used in this recipe doubles as cooking liquid for the rice—just dump the grains directly in the pot with the broth ingredients. Ground pork and tofu bulk up the soup, but it's the toppings—cilantro, scallions, chilies, and fried shallots—that really make it come alive.
Soba Noodle Soup With Chicken, Tofu, and Bok Choy
This soup is hefty with add-ins: shredded chicken thighs, ribbons of bok choy, diced tofu, and hearty buckwheat noodles. The broth itself, though, is simple and bright, flavored with ginger, garlic, lemongrass, and star anise. Soy sauce and vinegar give the soup some depth, and a garnish of cilantro and scallions perk it up.
